It takes a lot to get attention in the restaurant world. But good restaurateurs have the creativity and innovative spirit that helps them carve their own niche.

Panchero’s Mexican Grill, a franchise founded in Coralville, Iowa, in 1992 by Rodney L. Anderson and his father, Thomas R. Anderson, set itself apart from other “quick-serve, fresh Mexican” restaurants with — are you ready? — “Bob the Tool.” According to a press statement, “Bob the Tool” is used to mix the customized burritos so that you get every ingredient you’ve chosen “in every bite.”

If you want to see if this really works, a new Panchero’s Mexican Grill opens Tuesday, January 24, at 691 Route 130 North in Hamilton. On Wednesday, February 1, they will hold a Dollar Burrito Night from 4 to 6 p.m.

The owners are Pranav Desai, Dilip Naik, and Mahul Patel, who will serve as managing partner. Patel was formerly an owner-operator in the wireless phone industry, but he has always wanted to get into the restaurant industry.

“This exciting opportunity came along at the right time so I decided to make a move,” says Patel. “The quick-serve Mexican segment is fast growing, and we plan to open additional restaurants in the tri-state region withing the next three years.

The menu covers the full gamut of Mexican fare: signature fresh-pressed tortillas, quesadillas, tacos, burrito bowls, and salads. “Bob the Tool” is waiting for you.
